CONCLUSIONS Increased use of wheat starch appears to offer the best opportunity for the development of a starch industry based on UK-grown starch from the point of view of agronomic suitability, support policy, future market demand and processing margins. Varieties of maize grown for starch production are not suited to UK conditions, and EU support policy currently prevents any development of a UK potato starch industry. However, analysis of the markets for starch indicate that the most promising markets are those based on the use of cereal starch, and wheat starch currently has an advantage in terms of processing margins as compared to maize and potato starch.
